DiscussionMonterey Jack cheese was originally made by Franciscan monks of Monterey, California, USA in the 1800s. A businessman by the name of David Jack first began to sell the cheese thus giving Monterey Jack it's name. It is a soft, white cheese with a slight tang to it. Authentic California Jack cheese has a tiny eye structure throughout while Jack cheese made elsewhere has no eye structure. It is ready to eat after a month of aging, with more it becomes slightly more acidic. Dry Jack Cheese is aged 7-10 months and becomes dry enough to be used grated. Links
